These Mojito Madeleines by Blossom Bakery blend the vibrant flavours of mojito with the delicate elegance of traditional Madeleines. Perfect for any gathering or a sweet escape anytime!

Our Tropic Infusion Kit makes recipes like this so easy. But what’s even better is how many different flavour combinations you can create to make this recipe your own. Banana and Coconut or Piña Colada and Pineapple are just two other delicious pairings. Of course, these are just suggestions. The beauty of this recipe is that you can use any of our Flavour Drops  – not just the Tropic Infusion Kit – so have fun with it!

For an extra layer of indulgence, consider swapping out the glaze for a flavoured chocolate drizzle instead. Just melt down your chocolate and add in some Coconut Flavour Drops or flavour of choice, for a rich, chocolatey drizzle that complements your Madeleine Cookies perfectly.

 

Mojito Madeleine Cookies

Ingredients

Madeleines

  • 1 cup flour
  • ½ cup butter
  • ½ cup sugar
  • 3 eggs room temperature
  • 1 tbsp brown sugar
  • 1 tbsp agave
  • ½ tsp baking powder
  • ¼ tsp Hedessent Mojito Flavour Drops
  • 12 drops Hedessent Sour Wizard Flavour Enhancer

Glaze

  • 2 cups icing sugar
  • 2-4 tbsp milk
  • Zest of one lime
  • 10 drops Hedessent Mojito Flavour Drops
  • 6 drops Hedessent Sour Wizard Flavour Enhancer

Instructions

Madeleines

  • Pre-heat oven to 350°F
  • In a small saucepan, melt butter, brown sugar, and agave over low heat. Keep mixture warm. In a mixing bowl, combine flour, sugar, and baking powder.
  • In another bowl, whisk together eggs and Hedessent flavours.
  • Slowly whisk egg mixture into the dry mixture, gradually adding the melted butter to make a smooth batter.
  • Pour batter into a plastic zip lock bag or piping bag. Refrigerate for at least 2 hours or overnight.
  • Spray Madeleine molds with a non-stick cooking spray. Cut corner or tip off bag and pipe batter into the pan, filling each shell until almost full. Bake for 12-15 minutes.

Glaze

  • Whisk milk into icing sugar one tablespoon at a time until the glaze is the consistency of thick cream. Mix in Hedessent flavours and lime zest.
  • Drizzle warm cookies with sugar glaze and serve. Enjoy!

To Make a Chocolate Drizzle:
Add 10 drops of flavour of choice (we went with Coconut) per 100 grams of melted chocolate. Mix and adjust to taste. 
Madeleines are traditional French cookies that are really like cakes.
They can be flavoured many different ways, making them perfect for Hedessent Flavour Drops
Traditionally served warm out of the oven, these mini cookie cakes can be kept a couple of days in the fridge. Alternatively, the batter can be made the day before, and the cookies can be baked right before serving.
The glaze brings the Mojito flavour to the forefront. If you are looking for a more subtle flavour profile, skip the glaze and top the cookies with icing sugar.

Jackie’s love of developing recipes and creative flair turned to obsession while trying to meet the needs of the ever-growing vegan and gluten communities.
