Indulge in the delicate luxury of Lavender Poached Pears, paired with the velvety richness of Tahitian bean whipped cream
This elegant dessert is surprisingly simple to make and promises to elevate any occasion with its exquisite flavours.
Poached pears are often reserved for special occasions or fancy dinner parties, but the latest recipe by Heather Shaw will show you otherwise. The truth is, they’re a breeze to whip up, and oh-so-versatile. Whether you’re treating yourself to a solo brunch or hosting an afternoon tea with friends, these lavender-infused beauties are guaranteed to steal the show.
Now, let’s talk flavour! The combination of lavender, thyme, and a hint of lemon served with vanilla cream makes these pears so flavourful and quite irresistible. The lavender adds a floral elegance to the poached pears, while the Tahitian Bean Flavour Drops infuse the whipped cream with a decadent richness that’ll have you coming back for seconds (and maybe even thirds).
Alright, let’s get to it! Grab your saucepan and your Flavour Drops – it’s time to get cooking with minimal effort and maximum flavour!

- 3-4 sprigs thyme
- 2 lemon rind pieces

- 4 ripe pears, peeled, halved lengthwise, and core removed
Tahitian Bean Whipped Cream
- 1 cup 35% whipping cream
- 1 tsp Hedessent Tahitian Bean Flavour Drops
- Dried Lavender buds (optional)

Instructions
Lavender Poached Pears
- In a medium saucepan, add water, honey, pears, thyme, lemon rind, and 3 tsp Hedessent Lavender flavour.
- Bring pears to a gentle boil and simmer for 10-15 minutes, turning pears occasionally, until easily pierced with the tip of a paring knife but not falling apart, about 20 minutes.
- Remove pears from liquid and set aside.
- Continue to cook down liquid until it becomes a syrup in consistency.
- Remove from heat, stir in the remaining 3 tsp of Lavender flavour, and add a sprinkle of dried lavender buds (optional).
Tahitian Bean Whipped Cream
- While pears are simmering, whip heavy cream with Tahitian Bean Flavour Drops and vanilla bean seeds (if using) until soft and creamy.
Assembly
- Serve pears with whipped cream and a drizzle of lavender syrup. Garnish with dried lavender buds (optional).
