There’s something about those crispy, salty potatoes that always has us coming back for more. For these recipes, we will show you how you can take a common everyday ingredient like mayo to level-up your fries… because really – who even needs ketchup?
Before we get to the dips… let’s get started with the fries!
Air Fryer French Fries
Equipment
- 1 Air Fryer
Ingredients
Air Fryer French Fries
- 1 russet potato, scrubbed and unpeeled or 2 Yukon Gold potatoes
- 1 tbsp olive oil
- 1 tsp freshly ground pepper or Herbes de Provence
- 1/4 tsp freshly ground pepper
- Pinch Smoked Paprika
- Garnish Kosher Salt to taste
- Parmesan optional
Instructions
- Cut potato into ¼-inch thick slices and ¼-inch thick matchsticks; place in a large bowl filled with hot tap water for 10 minutes. This will help to achieve the crispy french fry result.
- Preheat air fryer to 375°F. Drain potatoes and then dry on paper towels. Transfer to a large bowl and toss with oil, salt, Herbes de Provence, and pepper, tossing well to coat.
- Cook potatoes in air fryer in one layer, without overcrowding, cooking in two batches if necessary. Cook for 8 minutes; shake basket, turning potatoes and continue cooking until light brown and crispy, 6 to 8 minutes.
- Transfer fries to a bowl and sprinkle with salt and freshly grated Parmesan (if desired). Serve with aioli.

All you need is some mayo, a bit of olive oil, lemon juice, and of course, a few key Hedessent Flavours – Mustard OS, Garlic, and Cooked Egg Yolk.
Our Mustard OS Flavour will bring a nice bite to the Aioli that raw garlic typically brings in a traditional aioli. The addition of Garlic Flavour provides all the aromatics and robust flavour that aiolis are known for. And our Cooked Egg Yolk Flavour adds in that smooth umami note and helps create a rich depth to your Cheat’s Aioli.
Cheats Aioli
Ingredients
- 1/3 cup mayonnaise
- 15-20 drops Hedessent Garlic Flavour
- 13-15 drops Hedessent Cooked Egg Yolk Flavour
- 8 drops Hedessent Mustard Flavour
- 1 tbsp olive oil
- 1-2 tsp lemon juice
- Pinch pepper
Instructions
- In a small bowl, stir together mayonnaise, Mustard OS flavour, Garlic flavour, Egg Yolk flavour, olive oil, lemon juice, and pepper to combine.
But why stop with just one delicious dip, when they’re so quick and easy to make? For the next dip, let’s get a little spicy!
For this dip, all you need is some mayo, a tsp of lemon juice, and 3 Hedessent liquid flavours. Our Roasted Chicken Flavour brings in a savory vibe while cutting out all the cooking time and basting in an oven. Our Garlic Flavour keeps your dip nice and smooth without the texture of raw garlic, while allowing for even flavour distribution and no sticky fingers from chopping! And for some heat, our Chili Hot Flavour can’t be beat! This is a deep, aromatic heat that skips the mouth burn, so you can make it as spicy or mild as you’d like.
Spicy Mayo
Ingredients
- 1/3 cup mayonnaise
- 20-25 drops Hedessent Roasted Chicken Flavour (optional)
- 15 drops Hedessent Garlic Flavour
- 10-13 drops Hedessent Chili Hot Flavour
- 2 tsp lemon juice
- Chopped chives or green onions for colour and texture (optional)
Instructions
- In a small bowl, stir together mayonnaise, Roasted Chicken flavour, Garlic flavour, Chili Hot flavour lemon juice, chopped chives or green onions for a little colour and texture if you so choose, and dip away!

Make ahead and refrigerate overnight to allow all the flavours to fully incorporate and combine for a full-bodied, even MORE delicious dip!
