Ingredients
Elderflower Simple Syrup - Yields
- ½ - 1 cup sugar See Notes for rational to changing simple syrup ratios
- ½ cup water
- ½ to 2 tsp butterfly pea flowers adjust until desired colour achieved
- 16 Drops Hedessent Elderflower Flavour Drops
Elderflower Mocktini
- 0.5-2 oz Elderflower Syrup adjust to preferred sweetness
- 1-2 oz lemon juice adjust to preferred tartness (if making a cocktail reduce to 0.5oz)
- ¼ - ½ cup Club Soda
- Ice
Instructions
Elderflower Simple Syrup - Yield approx. 4-16 drinks depending on usage
- Heat ½ cup water in a small saucepan.
- Add the butterfly pea flowers and let them steep for 5-10 minutes, or until the color is vibrant.
- Strain out the flowers and return the infused water to the pan.
- Stir in ½ to 1 cup of sugar, depending on the concentration you prefer—standard simple syrup (1:1) or rich syrup (2:1). Once the sugar has completely dissolved, remove from heat and allow to cool slightly. a (If the water has cooled too much, reheat gently.)
- Add in the elderflower flavour drops and stir well.
- Transfer the syrup to a clean, airtight container and refrigerate until thoroughly chilled.
Elderflower Mocktini - 1 Serving
- In a shaker, add ice, syrup, and lemon juice.
- Shake well.
- Strain into a chilled glass.
- Top off with Club Soda.
Notes
If you use 2 oz per drink, you’ll get about 4 servings. If you’re mixing it up and using somewhere in between, like 1 oz per drink, you’ll get approximately 8 servings.
