Strawberry Cheesecake Ice Cream

Ingredients

Ice Cream

  • 1/2 cup sugar
  • 3 1/2 tbsp cream cheese or dairy-free alternative
  • 1 cup heavy cream
  • 1 1/2 cups whole milk Vegan option: replace heavy cream and whole milk with 1 1/2 cans full-fat coconut milk
  • 1/4 tsp Hedessent Graham Crust Flavour
  • 15 Drops Hedessent Strawberry Flavour

Optional Macerated Strawberries

  • 1/2 cup chopped strawberries
  • 1 tbsp sugar
  • 5 drops Hedessent Strawberry Flavour Drops optional if strawberries are underripe

Optional Mix Ins

  • Crushed graham crackers
  • Macerated strawberries

Instructions

Ice Cream

  • In a large microwave-safe bowl, heat the cream cheese for about 15 seconds until softened.
  • Add the sugar and flavour drops. Whisk until the mixture looks smooth, almost like frosting.
  • Slowly whisk in the cream and milk (or coconut milk for the vegan version) until the sugar is dissolved.
  • Pour the base into a Ninja Creami Deluxe pint to the Max Fill line. Secure the lid and freeze for 24 hours.
  • When ready, follow the processing steps in your Ninja Creami quick start guide.
  • For mix-ins, add crushed graham crackers or macerated strawberries using the Mix-In function, or simply top before serving.

Macerated Strawberries

  • Add chopped strawberries to a mixing bowl.
  • Sprinkle sugar evenly over the top and stir gently to coat.
  • Add flavour drops if using, then stir again until the strawberries are evenly covered.
  • Cover the bowl and let sit at room temperature for at least 30 minutes, or refrigerate until ready to use. If refrigerating, use within 24 hours for best taste and texture.

Notes

Note:
We added graham cracker mix-ins for texture and topped ours with macerated strawberries for some extra jammy goodness, but all of that is optional. Even the base on its own delivers that rich strawberry cheesecake flavour. Happy mixin!
