Canada Day Popsicles

Ingredients

White Layer (Custard Cream Flavour)

  • 1 cup unsweetened coconut milk or any creamy alt milk
  • 1 tbsp sweetened condensed milk (1/2 oz) or sweetener of choice
  • 15 drops drops Hedessent Custard Cream Flavour Vanilla Ice Cream works well too

Red Layer (Pomegranate + Strawberry)

  • 1 cup diced strawberries
  • 1 tbsp lemon juice
  • 2 tsp sugar
  • 5-8 drops Hedessent Pomegranate Flavour
  • Optional: Small drop of red gel food colouring for a bold Canada Day red

Instructions

  • Make the white layer: In a small bowl, stir together coconut milk, condensed milk, and Custard Cream Flavour. Pour into popsicle moulds, filling halfway. Freeze until firm (1–2 hours).
  • Make the red layer: In a blender, combine diced strawberries, lemon juice, sugar, and Pomegranate Flavour. Blend until smooth. Taste and adjust sweetness or flavour as needed. For an extra-smooth finish, strain through a fine mesh sieve (optional).
  • Assemble: Once the white layer is frozen, gently pour the strawberry-pomegranate mix overtop. Insert popsicle sticks and freeze until completely set (at least 6hrs to overnight).
  • To release: Run the moulds under warm water for a few seconds, then pop out and enjoy!
