In a medium saucepan, add water, honey, pears, thyme, lemon rind, and 3 tsp Hedessent Lavender flavour.
Bring pears to a gentle boil and simmer for 10-15 minutes, turning pears occasionally, until easily pierced with the tip of a paring knife but not falling apart, about 20 minutes.
Remove pears from liquid and set aside.
Continue to cook down liquid until it becomes a syrup in consistency.
Remove from heat, stir in the remaining 3 tsp of Lavender flavour, and add a sprinkle of dried lavender buds (optional).
