Stir Hedessent Sage flavouring into honey and set aside.
Pre-heat oven to 350°F. Line a baking tray with parchment paper and place fig quarters onto tray. Drizzle figs with 3-4 tbsp. of infused honey, roast for 8-10 minutes, until soft.
In a food processor whip ricotta until smooth and fluffy. Transfer to a bowl and stir in Hedessent Fresh Fig and Garlic flavouring until fully combined.
To assemble: Spread 1 tbsp. of whipped ricotta onto crostini. Place a folded piece of prosciutto and one roasted fig on top. Drizzle with reserved sage honey and garnish with fresh sage leaves.
