spring mix lettuce

cooked quinoa
- cooled

roasted sweet potato cubes
- cooled

small red delicious apple
- thinly sliced

Instructions
Vinaigrette
Add all ingredients to a blender and blend on high until combined, about 30 seconds.
Salad
Layer the salad ingredients onto your serving plate and drizzle with the vinaigrette. Toss and serve immediately. Enjoy!

The vinaigrette keeps up to 10 days in the fridge. If the olive oil solidifies, let it sit at room temperature for 10 minutes and stir before serving.
