In a saucepan, combine water and sugar over medium-high heat. Stir until sugar dissolves and begins to boil; reduce to medium and boil for 2 minutes. Let cool for 30 minutes.
Strawberry Smash Cocktail
In a large glass or double Old Fashioned glass, muddle thyme, chopped strawberries, and coarse sugar using a wooden spoon or muddler until berries are juicy. Top with ice and set aside.
In a cocktail shaker, fill with ice, add gin, lemon juice, simple syrup, and Neroli flavour. Shake hard 60 times.
Strain into the prepared glass and top with club soda. Stir with a tall spoon; garnish with strawberry and thyme.

Flavour Swap: If you're a fan of having a hint of bitters in drinks, switch out the Hedessent Neroli Flavour with 15-20 drops Hedessent Orange Triple Sec.
