Cut potato into ¼-inch thick slices and ¼-inch thick matchsticks; place in a large bowl filled with hot tap water for 10 minutes. This will help to achieve the crispy french fry result.
Preheat air fryer to 375°F. Drain potatoes and then dry on paper towels. Transfer to a large bowl and toss with oil, salt, Herbes de Provence, and pepper, tossing well to coat.
Cook potatoes in air fryer in one layer, without overcrowding, cooking in two batches if necessary. Cook for 8 minutes; shake basket, turning potatoes and continue cooking until light brown and crispy, 6 to 8 minutes.
Transfer fries to a bowl and sprinkle with salt and freshly grated Parmesan (if desired). Serve with aioli.
